As you can see, last week was very productive. The chicken posole was the only dish from my previous menu plan I didn’t prepare. While at the supermarket today, I happened upon hominy – the lone ingredient from the recipe that I didn’t have on hand. Before, I decided to spare myself the time and expense and use corn as a substitute. I had never even heard of hominy. But now, I have a renewed interest in chicken posole. I’ll save that for later.

Among others, Jason from Dyalogues and Ashley from Spend on Life were both gracious enough to share a recipe from their personal collections on my Eats for the Week: 11/1/09 post. I’ve never prepared chard or butternut squash so I’m looking forward to trying out their suggestions on Tuesday and Friday. I’ll post pictures of the results.

Although I’m quite proud of myself for staying on track, cooking and grocery shopping exhaust me. Clearly, I’m out of shape. But I’m doing it for my wealth and my waistline. (Shut it. I don’t want to hear about how these eats are calorically rich and unhealthy.)

Monday – Tuna Casserole

Tuesday – Chicken with Swiss Chard & Potatoes

Wednesday – Oven Fried Chicken with Yellow Squash

Thursday - Arroz con Pollo

Friday – Butternut Squash and Carrot Soup with dinner rolls

Saturday – Fish and Chips

    Arroz con Pollo, love this dish. I want to try the swiss chard & potato recipe – I have yet to cook with swiss chard, too. Need some linkage or more recipe ideas, try Menu Plan Monday at Orgjunkie.

    Thanks for new recipes – I need to spice up my dinner meals.

    @Rona – Thanks. I’m hoping all of it tastes as good as it sounds. I guess that’ll depend greatly on my abilities in the kitchen. :)

    We love both butternut and chard; well, I do, anyway – my husband tolerates them pretty well, though! (Which is fortunate for him, because I still have a ton of swiss chard in the garden! I will definitely try your chard & potato recipe!)

    I picked up about a half bushel of butternut a couple of weeks ago at the farmer’s market, and we enjoyed butternut soup last week. Now I’m slowly working on roasting them and putting them in the freezer pre-cooked. Also, you do know that you can roast butternut squash (and others) just like pumpkin seeds, right? Such a great snack!

    Good point about the squash seeds @ToyLady. It’s a gift that keeps on giving! Hope you like the soup Shawanda :-) I’d suggest using a blender or food processor.

    @April – I was afraid the photo of the Salisbury steak would gross people out. Glad you didn’t immediately hit your browser’s back button. By the way, congratulations on the new baby as well as on quitting your job. :)

    @Ashley – I’ll finally get a chance to use my Vita-Mix for food preparation. So far, I’ve only made smoothies with it.
