As you can see, last week was very productive. The chicken posole was the only dish from my previous menu plan I didn’t prepare. While at the supermarket today, I happened upon hominy – the lone ingredient from the recipe that I didn’t have on hand. Before, I decided to spare myself the time and expense and use corn as a substitute. I had never even heard of hominy. But now, I have a renewed interest in chicken posole. I’ll save that for later.
Among others, Jason from Dyalogues and Ashley from Spend on Life were both gracious enough to share a recipe from their personal collections on my Eats for the Week: 11/1/09 post. I’ve never prepared chard or butternut squash so I’m looking forward to trying out their suggestions on Tuesday and Friday. I’ll post pictures of the results.
Although I’m quite proud of myself for staying on track, cooking and grocery shopping exhaust me. Clearly, I’m out of shape. But I’m doing it for my wealth and my waistline. (Shut it. I don’t want to hear about how these eats are calorically rich and unhealthy.)

Monday – Tuna Casserole
Thursday - Arroz con Pollo
Friday – Butternut Squash and Carrot Soup with dinner rolls
Saturday – Fish and Chips
