I’m hoping this week will be more productive than the last. I really hate to keep making excuses, but I lost a close friend on Friday, January 8th. With preparing to travel for her funeral, trying to catch up on work so I could take a day off for the funeral, and attempting to live in a state of denial for as long as possible, I wasn’t up for much cooking.

Over the course of a week, I only got around to making the Sauteed Tilapia with Lemon-Peppercorn Pan Sauce and Roasted Asparagus with Balsamic Browned Butter. I’ll probably try these two again since I overcooked them both. You know that didn’t stop me from finishing them.

Yep, I sure hope this week will be more productive.

Monday & Tuesday – Hash Brown Casserole with Bacon Onions and Cheese and Broccoli

Wednesday – T-Bone Steak with Mashed Potatoes and Mixed Vegetables

Thursday & Friday – White Bean and Sausage Stew

Saturday – Poverty Meal

Sunday – Cheesy Chicken & Salsa Skillet

Mmmm it all sounds so good.

Especially the white bean and sausage stew. Beans and I are starting to become best friends

I'm quickly becoming a fan of soups and stews. Fairly easy, fairly nutritious, usually delicious.

hey, just want to give you a {{{hug}}} for the loss of your friend. I'm really sorry for all who are feeling the pain. funerals are so bittersweet, I always hate going, but am usually glad that I did in the end.

"poverty meal" is a horrible name for a recipe, but it sounds good! i'll have to bookmark that one–i have a hard time finding frugal recipes that don't call for nasty supermarket ingredients (cheez wiz and canned soups and the like). i prefer real food that can be prepared on a budget!
