It’s amazing how shame can motivate you. I awoke this morning overcome with anxiety and guilt for cooking once last week. Writing another “I’m going to get it together” post this week would be – well – embarrassing.
Since there was still a bit of time for me to redeem myself, I raced to the grocery store to pick up a few ingredients. I’ve been feverishly chopping, cutting, simmering and searing for the last few hours.
Although I’m exhausted, I’m thankful I prepare a weekly menu plan.
Monday: Fried Catfish Fillets and French Fries - Personally, I prefer Louisiana Fish Fry with a bit of all purpose flour. Old Bay Seasoning for Seafood is all you need for flavoring. If you like a little heat – like me – add cayenne pepper. This is probably a Southern thing, but fried catfish is absolutely heavenly with a side of mustard. Mmm.
Wednesday/Thursday: Slow Cooked Shredded Beef Tacos – I’ve got a boneless chuck roast marinating in taco seasoning mix as we speak. Hopefully, this will turn out to be a really great idea. I’ll let you know how it goes.
Friday: Smothered Pork Chops – With almost 100% certainty, I can say that I’m calling my mama for help with this one. Although the recipe looks delicious, it seems like a lot.
Saturday/Sunday: Ya’ll know I’m eating out.
