Whew! What a week. I, literally, just returned home from Smithfield, NC where we celebrated my mother’s 59th birthday. Don’t ask me why my brother chose that location. I mean is it really too much to ask to meet at a half way point that’s a bit closer to civilization?
Either way, it feels good to be back in the metro DC area. Now it’s time to get down to the business of menu planning.
But first, I gotta tell you what I learned last week. Diced tomatoes and salsa are not the same thing. Of course this is obvious to some people, but I pride myself on being industrious. So when I realized I left my salsa at a friend’s, I decided substituting tomatoes with what were, essentially, tomatoes would work. Uh-uh. Although the tender, juicy, shredded beef that slow cooked for no less than 8 hours the night before was delicious, my tacos were not. Lesson learned.
Again, diced tomatoes and salsa are not the same thing.
Fortunately, I was able to create a really awesome dish of shredded beef and rice. I’m definitely gonna make that again. Except next time, I’ll mix in some vegetables.
My menu plan this week can only be described as easy breezy. Yep. I’m keeping it simple.
Monday/Tuesday: Spicy Beef Chili (Now is the time to use diced tomatoes.)
Wednesday/Thursday: White Bean and Sausage Stew
Friday/Saturday: Whatever I eat, it won’t be cooked by me.
Sunday: Chicken Fried Rice
