You’ve probably noticed I haven’t posted a menu plan in a while.
Well, it’s hard for me to publicly say what I’m gonna cook when I have zero intentions of cooking anything. In the last month or so, I’ve fired up my oven exactly once. I might’ve made some grits. Wait. Nope. Those were microwaved. Doesn’t count as cooking.
Anyhoo, I’m back on the menu planning bandwagon. As I’m sure you’re aware, eating out every day is expensive. And right now, I can’t afford the privilege.
This week, I’m focused on cooking the food I’ve already purchased. Which should really be the case every week.
Monday: Slow Cooker Chuck Roast, Potatoes, Onions and Rice & Mixed Veggies (Broccoli, Cauliflower and Carrots)
Tuesday: Country Style Ribs, Onions, Potatoes with Mixed Veggies
Wednesday: Slow Cooker Shredded Chicken Seasoned with McCormick Grill Mates: Garlic, Herb & Wine Marinade with Black Beans and Rice
Thursday: Fried Swai Breaded with Louisiana New Orleans Style Fish Fry and French Fries
Friday: Cafe Asia Happy Hour (If you’re in the DC area, feel free to join me around 4:30ish. I’ll be at the one in Arlington.)
Saturday: Leftovers
Sunday: Spaghetti and Meat Sauce

Mmmmm, pot roast. We had some yesterday to gird ourselves for Meatless May (and to make some space in the freezer). Finding vegetarian slow-cooker recipes that I'll actually like is the new challenge.
I aman admitted foodie so I love making meal out of what's in my pantry. Another trick is making extra so you have at least something left over each night. A big salad is always on the menu, too. And, remember hubby and I don't have to eat the same thing. Tonight he's eating a pork dish and I'll eat stuffed peppers–and we'll both be happy not letting food go to waste.

I wish I lived closer – I would totally have dinner with you Monday – Wednesday! Sounds delicious! We had steaks and mashed potatoes tonight, having potroast tomorrow, and probably eating out Wednesday…
Nice job putting together a menu. I made mushroom spaghetti yesterday and had takeout today. I think I'm gonna make Spanish rice and veggies tomorrow. Cooking more often is one of my goals this year. Not always easy but I've been doing better lately.
