It’s over. September has come and gone.
Last month, I set one goal - to eat the food in my freezer.
The question now is whether I accomplished that goal.
Weeeeell, not exactly.
I could’ve done better. You may have noticed there’s some September food in my October freezer.
To be honest, I’m only slightly disappointed in myself. It’s not a card I normally play, but I’ll make an exception this time. You see, I have *deep breath in and out * an excuse.
Lately, my employer has beefed up the frequency with which they provide lunch. I try to resist. I do, but it’s hard. It really is. You know?
Since I usually opt for the free lunch, my non-free stuff lasts much longer. The reason I don’t feel too bad about missing the mark on my September goal is because, ultimately, the end result was the same – I reduced the amount of money I spent on food.
There’s a pretty good chance I’ll stumble upon a few complimentary meals this week, so I’m creating a menu plan that’s a bit more reflective of what I can actually prepare. I certainly won’t cook everything, but at least I’ll decide from a few pre-selected choices.
By the way, I’m still trying to consume what I’ve got left in the freezer.
Option 1: Eggs, Cheese, Yellow Rice, Taco Meat
Option 2: Salmon Fried Rice
Option 3: Red Beans & Rice (minus the pickled pork)
Option 4: Greens & Beans
Option 5: Slow Cooker Chicken Tortilla Soup
Option 6: Salisbury Steak & Homemade Garlic Mashed Potatoes
