After all these years, I finally learned how to dice an onion. Judging by the popularity of the video How to Chop an Onion on Clicker, I’m not the only one who’s struggled in this area. Don’t be afraid to watch the video if you’re among those who haven’t mastered this basic culinary skill. There’s nothing to be embarrassed about.
Noticeably missing from this week’s menu plan is the traditional Thanksgiving feast. Since I’m not going back home to Jacksonville this year, I’m on my own. There’s no point in making a whole bunch of food I’ll end up tossing out later. Instead, I’ve chosen catfish over turkey. The other dishes I’m preparing for Thanksgiving day are what I’d normally eat on the holiday.
Even without my auntie Rachel’s dressing, I’m still looking forward to this week’s eats.
Sunday – Jerk Chicken with Rice & Peas (pictured above)
Monday – Poorman’s Sausage & Potatoes
Tuesday – Quinoa Chili
Wednesday – Leftovers
Thursday – Blackened Catfish Fillet, Collard Greens, Macaroni & Cheese and Sweet Potato Pie
Friday – Leftovers
Saturday – Grilled Cheese and Bacon Sandwich*
*I’m not actually going to use the recipe I’ve linked to. Although it would be funny (or scary) if I did.

My mother's family is Italian so we always started Thanksgiving with homemade ravioli! Otherwise, we stick with tradition….hope you have a great week!

I watched the video on the correct way to make a grill cheese sandwich……I will try a lid next time……sometimes I use an potato peeler on the cheese……and raisin bread……yummy……my son says I make the best "girl cheese sandwiches"….He is 20(HeeHee) but coined the phrase when he was a wee one……..
