Thanksgiving dinner turned out surprisingly well. Although turkey would’ve been great, there’s no way I would’ve been able to finish even a small one before tiring of it. Plus, I don’t have a fryer, and there’s absolutely no other way to prepare a turkey. I said “no other way!!!”

If you’ve got nothing against bottom feeding fish, I highly recommend you try the blackened catfish. It’s not featured on many menus in the mid-Atlantic region of the country. So, it was refreshing to eat something so true to my southern heritage on Thanksgiving.
At $5.99 per pound, catfish isn’t terribly expensive, but I’m still closely monitoring my local grocer’s weekly ads for a deal.
The Grilled Cheese & Bacon sandwich from last week was delicious. My inspiration for the meal came from two videos on Chow that dealt with how to fry bacon (it’s an art) and how to make a grilled cheese sandwich. Next time I’ll add a little scrambled egg.
I ended up eating three grilled cheese bacon sandwiches: two on Wednesday night and one on Thursday morning. I’m not sure if it was the cheese or the extra crispy bacon, but I was so exhausted after eating those two sandwiches on Wednesday night that I overslept the first five minutes of Glee.
Unfortunately, I didn’t get around to preparing two of the meals from the 11/22/09 menu plan. That’s okay. They’re making another appearance this week. Hope you don’t mind.

Monday – Poorman’s Sausage & Potatoes (repeat)
Tuesday – Quinoa Chili (repeat)
Wednesday – Chicken, Rice, & Spices Bake*
Thursday – Leftovers
Friday – Spicy Corn Chowder
Saturday – Tater Tot Casserole and Oreo Truffles
*For fear that the rice will come out undercooked, I don’t cook this recipe in the oven. It works fabulously on the stove top and smells heavenly.

One Black Friday finding (can’t say I got a great deal) I’m especially excited about is a slow cooker. It should arrive this week. I’m hoping to avoid cooking anything on the stove top prior to starting a dish in the slow cooker.
Do you know of any specific recipes a novice, like myself, can just toss in the pot and go?

They are really good. It's ideal to have them with a friend or friends. I have a hard time maintaining moderation with these treats.
