I’m still not 100% compliant with my menu plan, but I’m getting there. Last week, I made bacon wrapped chicken with a side of vegetables and mushrooms. They were pretty good, but the meal that really stole the show were the tacos.
Initially, I planned on making taco seasoning from scratch, but the prepared stuff was just too tempting. After browning the ground beef in a pan, I drained it and placed it in the slow cooker. Then, I mixed the taco seasoning mix in a bowl. Before pouring the mixture over the ground beef, I tasted it. That stuff is never salty or spicy enough for me.
So, I kicked things up a bit with about a 1/4 teaspoon of sea salt and a 1/2 teaspoon of cayenne pepper.
After 6 hours on low in the slow cooker, the beef was absolutely divine. My first time making tacos was a total success. I can’t wait to try shredded beef, chicken, and fish tacos.
Monday: Whatever I have leftover from Sunday
Tuesday: Garlic baked chicken wings, collard greens, and yellow rice
Wednesday: Baked catfish combined with leftovers vegetables and rice from Tuesday
Thursday/Friday: Fried pork chops with a side of broccoli, onions, peppers, and mushrooms
Saturday/Sunday: I’ll probably be in New York, so let me not lie to you or myself about what I plan on cooking.

Great looking menu especially the garlic baked chicken wings! YUM!
Garlic baked chicken wings was what caught my eye, too … I bought a big bag of frozen chicken from CostCo, but haven't been able to eat most of it because the chicken I bake is so incredibly boring!
It's great to see that you can bake chicken (healthy!) while still making it tasty ….
This week I'm trying pan-seared chicken with onions and peppers and spices — e.g. fajitas!
@Sherry and Afford-Anything – Garlic baked chicken wings are one of my faves. I use seasoned salt, onion powder, garlic powder, and cayenne pepper for seasoning. I then sear/brown/whatever the outside in a pan with olive oil or bacon grease (yes, I am ashamed) before baking in the oven. They are soooo delicious!
