The last few weeks were super busy. Once I remembered the less I have to do the less I get done, I signed up for a ton of activities.
It’s counter intuitive, but if I don’t schedule non-work related tasks, I’m more likely to procrastinate.
This strategy totally works. There’s only one problem: I’m exhausted.
I know chicken wings and pork chops were on my last menu plan. Sadly, I didn’t get around to cooking them. I just couldn’t drag my butt to the supermarket to grab the ingredients I needed. So I subsisted on Super Pollo and McDonald’s. Pathetic, I know.
This week, I’m looking forward to relaxing. Now that I have groceries, I really hope I tear it up in the kitchen.
As I write this, I’m realizing the main reason I’m not scheduling so many evening networking, volunteering or recreational activities is so that I can dedicate more time to working out. So never mind. I guess I won’t be relaxing after all.
Here’s my dream menu plan for the week.
Monday/Tuesday: Leftovers (Asparagus & Mushroom Quiche and White Bean Sausage Stew)
Wednesday: Salisbury Steak, Mashed Potatoes and Cabbage
Thursday: Baked Chicken Thighs, Collard Greens and Yellow Rice
Friday: Lebanese Taverna (Happy Hour)
Saturday: Shredded Beef Tacos
Sunday: Cob Salad with Watermelon Mojito Popsicles (optional)

Hey better late than never!! I still need to make a spinach soup cuz I bought the ingredients last week. I don't want them to go to waste so I gotta get crackin tonight. I'm meeting friends for dinner though so that puts a crimp in my plans. Hmm I should throw everything in my slow cooker anyway!

That's the problem with fresh produce. It's so unforgiving. This week there are collard greens on my menu, so I'd better get it together soon. Otherwise, my $2.50 is going in the garbage.
Don't be too hard on yourself about not getting to the supermarket to buy the ingredients for your chicken wings and pork chops recipes. Everybody has those moments where they just don't feel like grocery shopping and cooking. I know I do. You have a tasty menu plan for the week. I sure wish I were eating at your house. Yummy!

So far, I'm doing pretty good this week. I still want chicken wings, but I guess my Whole Foods stopped selling them. The last five times I went there, they were out of stock.
I was going to say.. it's Tuesday lol. I need to complete and stick to a meal plan, especially if I have fitness goals I would like to meet. Even though you're late with it, it's still motivating. My question is are you sticking to this exclusively or do you buy snacks and things throughout the day?

I try (emphasis on the word "try") not to snack during the day. Snacking is a good way to end up fat. If I'm hungry, I'd rather just have a small meal.
Often I'll have leftovers for breakfast as I don't have a problem eating non-breakfast foods in the morning. Actually, "breakfast food" doesn't make a whole lot of sense to me. Most of them are sugary simple carbohydrates that aren't filling and make you exhausted almost as soon as you eat them.
