It doesn't look like much, but the baked swai was delightful. (Did you know that swai is also called striped catfish? No wonder I like it so much.)
Well, it looks like we don’t have many days remaining in September. Which is a problem as I haven’t abandoned my goal of eating all my freezer’s contents by month end. If I’m to be successful in this very simple endeavor, I’d better get eatin’.
There are bags and bags of frozen fruit left. Instead of making smoothies, I’ll mix the thawed fruit in with my morning granola and yogurt. I’m almost certain this concoction will be a disaster, but I’ll try it any way.
Since I have quite a bit of food left, I thought about cheating and cooking a bunch of meals to consume in October. That plan doesn’t help much, because I’d still have to freeze the meals I prepare in advance. But just to make myself feel better in the event I fall short of my goal, this week I’ll try to work in a few freezer friendly dishes.
Monday: Hamburger and onions, yellow rice, cheese, and mixed vegetables
Tuesday/Wednesday: Tator Tot Casserole (Duggar Family Version)
Thursday: Lemon Butter Salmon & Broccoli
Friday: Baked, Marinated Chicken Drumsticks & Thighs
Saturday/Sunday: Whatever I don’t have to cook. It could be anything from fast food to tapas to TV dinners to movie theater popcorn and a large carbonated beverage.

Your meals look good! I have a lot in the freezer too! A NEW thing for me actually! I have started doing freezer to crockpot meals planned for Friday and Saturday so they are super easy and no biggie if they get bumped b/c of our schedules.
Thanks! I want to get better at freezer cooking, but I’m usually too busy or too lazy to get to it on the weekends. Hopefully, I’ll come up with a strategy that’ll allow me to mix and match the food I cook to come up with a variety of meals.
I'm so glad to know I am not the only one whose weekend meals can consist of a bag of microwave popcorn and a soda! LOL! Your meal plan looks great and I hope that you can reach your goal!
